This is a replacement unit for our caravan after the previous model was unservicable. So far it is doing the job although not be able to simply set the cooking time is taking a little getting used to. Its modern finish certainly fits well in our van.

is this microwave suitable for powering by solar panels

No sorry, it would require mains power.
Does this microwave run off a Honda 2000 watt generator. Looking for a microwave for a horse float. What would you recommend

This microwave has an input power requirement of 1150W which should be just fine with the Honda generator that you own.
